These muffins are a healthy little snack that the kids (and adults) will love – packed with sweet potato, coriander, cheese, chili, eggs. I’m soooooo lucky Miss E is not a fussy eater and eats pretty much everything (apart from tomatoes and peppers). They’re pretty easy to make and make a delicious savoury snack. Sweet potatoe are a rich source of fibre and this is a great way to get some fibre into your kids food without them even realising it.
