I bought a head of red/purple cabbage the other day and I have a confession to make. I have never cooked with red cabbage so I’ve challenged myself to try 2 recipes and this is the first of 2. Of course I’m not going to make the challenge very difficult so I made red cabbage coleslaw. It’s such an easy and tasty dish and works great with a sandwich or quiche and today I had it with bruschetta and beetroot. What a delicious lunch. Okay so I know it’s not the healthiest with the mayo but sometimes a bit of indulgence is good, right?
If you want a crunchier coleslaw it’s probably better to finely slice the cabbage and coleslaw with a knife
