I’m super excited to be doing the Happy Pear 4 week Vegan Cookery Course. I’m not saying I’ll be going fully vegan but I do think that life is all about balance. Taking some inspiration and doing more vegan and plant based cooking is definitely what I want to do for many reasons and it’s a healthier lifestyle choice.
We didn’t really do waffles growing up but when I met my Viking he introduced me to waffles and the Scandis lovvvve their ‘Vafler’. What’s not to love about these cute little heart shaped breakfast bites.
This is a great 5 to 10 min breakfast option. I’ve tweaked their recipe a little – for many vegans honey wouldn’t be used in the recipe but I’m experimenting so I’ve added it in. Load these babies up with whatever fresh fruit you have. My LO loves blueberries and strawberries but work with what you have and what you love and you can’t go wrong.
