I was in the throngs of making cupcakes and fancied a creamy lime frosting. It can often be a case of testing and tweaking different recipes but this was bang on the first go and I promise you it is sooooo good. Its got the perfect amount of lime (just make sure your limes are juicy) without it being overpowering but subtle enough that you know it’s there. You can leave this frosting in the fridge for a few hours to harden up or just serve up as is for a lighter, creamier option.
