You know when your hankering after something tasty with a burst of flavours? Well this is it. It’s the kind of dish that’s yummy for a weekend brunch when you have a bit of time to doing things like grating. I’ve only recently started cooking with courgette and combined with feta, sweetcorn, cheese and some herbs this is a little cracker of a dish. Courgette is funny right – pretty bland on it’s own and definitely needs the company of other tastier foods for it to sing.
