I love to shake breakfast up a bit sometimes instead of the same humdrum of cereal, toast or brown bread (apart from pancakes at the weekend when we have extra time and slow mornings). Although it takes a little bit longer to make these 10-15 mins (which isn’t really that long unless you’d rather cling to your pillow for an extra few mins sleep) and you’ll have them whipped up. It’s really the perfect weekend breakfast when you have some extra time. They’re even perfect as a lunch option. To open the oven to a dozen cheesy light fluffy muffins warm out of the oven is surely a great way to start the day.
