I am very partial to soup. It’s quick and easy and that’s how I like things. Make a huge batch, freeze it and you have lunch for a few days. While doing The Happy Pear course they shared their recipe for this soup and I’ve tweaked it a bit but OMG my mouth has been transported back to Thailand. You can actually feel this soup nourish your body, mind and soul. It took me right back to the hustle and bustle of Bankgok where the restaurants are teaming with people feasting on beautiful Thai food. Coconut and lime is such an integral part of their food and the subtle hit of lime just pulls everything in this recipe together.
